This is the original Jamaican Christmas cake, sometimes called black cake, fruit cake, rum cake, and maybe other names. This cake is a delicacy mostly eaten from Christmas to the New Year or (October to January). However, it can be eaten at any time of the year you choose.
The cake is a mixture of sugar, butter, molasses, spices, essence, eggs, browning, flour, baking powder, salt, etc.most importantly; fruits and raisins soaked in Jamaican red-label wine and white rum for over a year. This combination whips up a flavorful, not-so-heavy, creamy-tasting black cake that melts in your mouth and leaves you wanting another slice.
